Hector Berlioz's first wife was Harriet Smithson, a noted Shakespearean actress of her day, and she inspired Berlioz to produce several excellent, Shakespeare-inspired works:

I found this one on a site listing Shakespeare-inspired music. BUT, my reading group mate and opera maven writes:
"Rossini’s Otello is pretty far divorced from Shakespeare. If it’s “inspired” by WS, it’s at several removes. The libretto is based on a previous Italian Othello play by a guy named Cosenza, which was based on a French adaptation by a guy namde Ducis, plus there was a bunch of input from Rossini himself. The third big role isn’t Iago but Rodrigo(?!).

WS is in there somewhere, but more as a flavoring than a substantive ingredient.

The wonderful Italian modern jazz reed player, Gianluigi Trovesi (a key member of the GREAT Italian Instabile Orchestra), released a delightful album based on The Dream in 2002.
